Our hand-extruded Bigoli is a thick, round egg pasta crafted using traditional techniques‚Äîentirely by hand, without modern machinery. Made from our very own farm-fresh chicken eggs and locally milled flour, this pasta has a rich, golden color and a satisfyingly chewy texture. Its slightly rough surface, created through the extrusion process, allows it to cling beautifully to sauces, making it a perfect choice for bold, rustic dishes.
